This chocolate salted caramel tart is absolutely amazing. A buttery almond crust, gooey salted caramel and bittersweet chocolate ganache, all garnished with salted crystals. Chocolaty, rich and buttery, a perfect treat for any occasion. Ingredients: Makes about 6-8 servings Almond Chocolate Sweet Pastry 1 1/4 cups (160g) flour 1/4 cup (30g) ground almonds 1/4 cup (30g) unsweetened cocoa powder 1/4 cup (50g) sugar 1/4 tsp salt 1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes 1 tsp vanilla extract 1 egg 1-2 tbsp ice water Caramel 1 1/2 cups (300 g) sugar 1/2 cup (100g) water 1/2 cup (120 g) heavy cream 5 tbsp (70 g) unsalted butter 1 tsp salt Chocolate Ganache 1/2 cup (120 g) heavy cream 4 oz (120g) bittersweet chocolate, chopped Garnish sea salt crystals Directions 1. Prepare the sweet pastry. In a large bowl mix flour with ground almonds, cocoa powder, sugar and salt. 2. Incorporate butter to the flour mixture, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add the egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 30 minutes or overnight. 3. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 1/2 inches larger than your tart pan. Lift up the rolled dough and place it on a greased 9 inch tart pan. Remove the edges and refrigerate for 30 minutes before baking. 4. Prick the dough with a fork, line a parchment paper over the dough. Fill with dry beans, rice or pie weights. 5. Bake for 15 minutes in preheated 350 F (180C) oven. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes. Allow to cool before removing from the tart pan. 6. Prepare the caramel. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color. 7. Remove the pan from the heat and add the cream. It will bubble a little bit. 8. Cook for about 1 or 2 minutes stirring constantly with a wooden spoon until smooth. Remove from heat and add butter and salt. Stir well until smooth. 9. Let the caramel cool slightly and pour over the chocolate crust. Refrigerate for about 4-5 hours. 10. Prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth. 11. Pour the chocolate ganache over the caramel. Spread it evenly and refrigerate for another 2-3 hours before serving. Sprinkle with sea salt flakes and serve. Watch more How to Make Candy videos: http://www.howcast.com/videos/511741-How-to-Make-Chocolate-Sea-Salt-Caramels-Candy-Making Ingredients Â_ cup heavy cream Â_ cup sugar Â_ cup corn syrup 1 teaspoon sea salt 4 ounces milk chocolate chips Optional: 2 tablespoons cocoa nibs Bring heavy cream, sugar, corn syrup and Â_ teaspoon sea salt to boil. Cook until lightly tan. Pour over milk chocolate and stir to combine. Pour into parchment paper-lined 6-inch pan; sprinkle with remaining salt and cocoa nibs, if desired. Cool at room temperature for at least 2 hours before cutting into small squares and serving. Makes 2 dozen. Today, we're making chocolate sea salt caramels. So, I'm starting with about three-quarters of a cup of sugar ran into a pot, three-quarters of a cup heavy cream, and about half a cup of corn syrup. I just use regular corn syrup. You can use light if you want to. It won't make it any healthier, but you can. Totally low-fat recipe. All I'm going to do is bring this to a boil on the stove, and we're just going to cook it until it's nice and thick. So, my caramel is a nice golden color, just lightly golden, almost tan. We don't want to go too dark or else our caramels are going to be too firm to cut into nice, chewy caramel bites. So, I'm going to add about four ounces of milk chocolate, a little bit of sea salt which is really going to bring out the flavor of the chocolate in the caramel. I'm just going to stir those together, and my chocolate is very quickly going to melt and start to set up here. As soon as your chocolate is melted, these caramels can go right into a six-inch pan lined with a little bit of parchment paper or a loaf pan. If you have a loaf pan, that's really great. Just kind of press it in and spread it out nice and evenly. I'm just going to top this off with one of my favorite things, which is cocoa nibs. Cocoa nibs are kind of unrefined cocoa beans, just a nice crunch and a little extra chocolate flavor. I'm just going to sprinkle those right over the top, and a little extra salt. I'm like a salt fiend. And, that's it. I'm going to let those set out in either room temperature for about an hour or in the fridge or freezer for about ten to fifteen minutes until they're firm enough to cut. So this is what my caramel looks like after I've taken it out of the pan after it's chilled for about an hour. It's nice and firm, ready to be cut. I've cut off one little edge already, but I'm just going to go ahead and do about a half-inch bar. I'm just going to keep cutting. If you find your knife is sticking at all, you can kind of spray it with just a little bit of PAM or a non-stick spray. These are really great gifts, actually. You can kind of box these up or bag these up and give them to friends. That's it. I'm going to go in the other direction and trim off my edges. That's your snack. That's your reward. Just nice little rectangles, and that's it. I'll do the rest of them, and then all you could do is either with a nice square of parchment paper you can wrap it and twist the edges so you have a little candy. Or you could just leave it like this with a little foil wrapper, and it's a beautiful candy ready to go. Just store these at room temperature and you can have them for about a month. That's how you make chocolate sea salt caramels.

Ingredients: Chocolate Sponge Cake (x3) 2 eggs 2.1 oz (60 g) sugar 0.9 oz (25 g) flour 0.14 oz (4g) baking powder 0.8 oz (22g) cocoa powder 0.51 us fl oz (15 ml) sunflower oil 0.75 us fl oz (22 ml) milk Salted Caramel 7 oz (200 g) sugar 1.7 us fl oz (50 ml) water 2.5 oz (70 g) unsalted butter 5 us fl oz (150 ml) heavy cream 3/4 tsp - 1 tsp salt Salted Caramel Buttercream 8.8 oz (250 g) butter 17.6 oz (500 g) powdered sugar 2 tsp vanilla extract 3.5 oz (100 g) salted caramel 1.7 us fl oz (50 ml) milk Syrup 1 oz (30 g) sugar 1.7 us fl oz (50 ml) water zest from one orange 5 us fl oz (150 ml) orange juice Chocolate Ganache 9.9 oz (280 g) dark chocolate 4 us fl oz (120 ml) heavy cream 6 oz (170 g) butter -Remaining Salted Caramel for topping (you may need to warm the caramel if it has set) Preheat oven to 356 F (180 C). Line the bottom of a 10-inch springform with parchment paper. Prepare 3 sponge cakes. To prepare one sponge cake, beat together eggs and sugar until fluffy. In another bowl mix together flour, baking powder and cocoa powder. Add oil to egg mixture. Mix well. Gradually add flour mixture, alternating with milk. Fold in ingredients gently with spatula. Pour the mixture into prepared springform. Bake in preheated oven for 20-25 minutes. Repeat these steps two more times. Cool completely before assembling. Salted Caramel: In a heavy bottomed saucepan or pan, heat the sugar and water over medium heat. Stir for a minute to help sugar dissolve. Once it starts to boil, don't stir anymore, just swirl the pan once or twice. Keep an eye on the sugar. As soon as it turns amber in color add butter and whisk until all the butter has melted. It will bubble up a lot but keep whisking and be careful. Add in heavy cream. It will bubble up even more but just keep whisking. Remove pan from the heat and add salt. Stir until fully combined. Allow salted caramel to cool completely. Salted Caramel Buttercream: In a bowl, beat butter until light and fluffy. Gradually add powdered sugar. Add vanilla extract, milk and salted caramel. Mix well to combine. Syrup: Heat the sugar and water over medium heat, stirring to dissolve the sugar. Let it simmer for few minutes. Add in zest from one orange and orange juice. Let it simmer few minutes more to allow the zest to infuse the water. Strain through a sieve. Make ganache after you assemble the cake. Chocolate Ganache: Place a heat-proof bowl(or pan) over a pan of simmering water. Bottom of the bowl shouldn't touch the simmering water (double boiler). Stir chocolate and heavy cream in a bowl until chocolate is completely melted. Remove from the heat. Add butter and stir until butter melts too. Soak first cake layer generously with syrup and frost it with buttercream. Top with another cake layer, again soak it generously with syrup and frost it with buttercream. End with the last cake layer, soak it generously with syrup. Frost top and the sides of the cake with chocolate ganache. Pour the remaining salted caramel over the top of the cake letting it drip over the edges (If you want a lighter version, not so caramely, just omit salted caramel topping) Decorate as you like. Refrigerate the cake overnight. A quick video on how to make a salted caramel chocolate layer cake with a ganache frosting (or unsalted if you prefer). This cake is rich, moist and absolute must-have recipe in your baking repertoire. The measurements below are for a 2-layer cake. If you want to make the 4-layer cake as shown in the video, double the recipe for the ganache and cake, but not for the caramel, which is already plenty enough. MEASUREMENTS: (For 2 layers using 9-inch cake pans) CHOCOLATE GANACHE: 11.5 oz. (325g) bittersweet chocolate (~55%) 1 + 4/5 cup (400g) heavy cream 2.4 TB (35g) butter SALTED CARAMEL: 1 cup (240g) heavy cream 1 Vanilla bean (1 TB extract) 5 TB (70g) unsalted butter 4 TB (75g) light corn syrup 1 cup (200g) granulated sugar 1/4 cup (30g) water 1/4 to 1 tsp. (1-4g) sea salt (optional) Note: I forgot to mention to remove the vanilla pod after you set it aside to make the caramel. Also, cover the cream with a lid to keep it warm. Lightly oil parchment paper to prevent the caramel from sticking. In a small saucepan, heat the cream, butter and salt just until the butter has melted. Turn off heat and set aside. In a large saucepan, gently stir together the water, corn syrup and sugar. Try to avoid getting any sugar crystals on the sides of the pan while stirring. If you do get sugar crystals on the sides of the pan, brush them down with a damp pastry brush. Place the candy thermometer in saucepan. It is critical to use a candy thermometer when making caramel as you're working with very specific temperatures. They're widely available and fairly inexpensive. Heat your saucepan to medium-high. Once the sauce pan is on the heat, do NOT stir the mixture. After a minute or so, you'll start to see bubbles form around the edges and then push into the centre. When your candy thermometer reaches 300˚F, turn off the heat and CAREFULLY whisk in the cream mixture. The mixture will bubble and rise so use extreme caution while whisking. Once the mixture is combined, turn the heat on to medium. Do NOT stir. Your caramel is ready when the thermometer reads between 245˚F and 250˚F. Turn off the heat and quickly stir in your vanilla extract and liqueur (if you choose). Be sure not to scrape the bottom of the pan because burned bits may have formed and will end up in your finished product. Pour the mixture into your prepared pan and tap it on the counter a few times to release any air bubbles. Allow the caramel to set for 20-30 minutes before topping with salt. Allow the caramel to set for at least 2 hours before cutting it into to pieces. Make the caramel sauce: Heat sugar in a medium saucepan over medium-high heat, stirring occasionally with a spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn. Once sugar is completely melted and reached a deep amber color, remove the saucepan from heat. Immediately pour heavy cream (Be careful, as the caramel will bubble up) and Whisk until all the cream has been incorporated and you have a smooth sauce. Return to heat and stir in butter and salt. stir until butter it is completely melted and the salt is incorporated. Set aside. 2. Place the chocolate in a double boiler or glass bowl over a simmering pot of water. Allow to melt completely, stirring occasionally. 3. Spoon 1-2 tablespoons melted chocolate into 8 baking cups, use a spoon to spread chocolate across bottom and up sides of each cup. Place the cups in the refrigerator for 10-15 minutes. Then spread another layer of chocolate and refrigerate for 10 minutes more. 4. Fill with 1 tablespoon of the caramel sauce. And top with remaining chocolate. 5. Sprinkle each chocolate with a little coarse salt and allow to set at room temperature. Preheat oven to 350 degrees. Line a 9x13 inch pan with parchment paper 2. In a large bowl combine the flour, salt, and baking powder. In another large bowl, beat together the sugar, cocoa, oil, eggs and milk. Add the dry ingredients until blended. Fold in chocolate chips. 3. Spoon two thirds of the batter into the greased 9x13 inch pan. Bake for 12 minutes. 4. Meanwhile prepare the caramel filling. Sprinkle coarse sea salt on top. 6. Drop remaining brownie batter over the top of the caramel and carefully swirl the top with a knife avoiding the sides. 7. Bake for an additional 30-45 minutes or until toothpick inserted in center comes out clean. Do not overbake. 8. Allow the brownies to completely cool before cutting. Let cool in refrigerator or freezer for best results. Garnish the brownies lightly with additional sea salt.

Place the sugar, corn syrup, and ½ cup of water into a saucepan and cook on medium heat until the sugar is a rich, brown color. Add 3/4 cup of the heavy cream (watch for steam!) and stir until incorporated. Stir in the butter and sour cream until smooth. Pour into a precooked crust and cool until slightly firm. 2. After the caramel has slightly cooled, heat the rest of the cream in a saucepan until boiling. Pour in chopped chocolate. Let stand for 2 minutes and stir until smooth. Pour on top of caramel tart and top with sea salt. Refrigerate until chilled, about 2 hours. Use a whisk or wooden spoon to mix the ingredients together until evenly combined. Measure out the butter and melt in the microwave or on the stove top. Leave to cool for 5 minutes. Add the milk and eggs to the bowl with the melted butter and whisk with a fork until evenly combined. Pour the wet ingredients into the dry and fold together until just combined. Divide the cupcake batter between 12 cupcake liners and place into a 180C | 350F oven for 20 minutes or until the tops spring back when pressed. Cool on a wire rack. To make the buttercream beat the butter in a stand mixer or with a hand mixer for 5 minutes until it is pale in colour and doubled in volume. Add the icing sugar in thirds, scraping down the bowl each time so everything is evenly combined. Add ⅓ of a cup of salted caramel sauce to the buttercream and beat until for another minute or so until combined. If the buttercream is too thick add a few tablespoons of milk. Cut a small hole in each cupcake and fill with the remaining caramel sauce. Pipe a generous amount of salted caramel buttercream. Today I'm sharing with you how to make a chocolate salted caramel tart. This is an incredibly decadent dessert. A biscuit base filled with smooth buttery caramel, topped with chocolate ganache and a sprinkle of flaky sea salt. Salted caramel is one of my favourite flavours. With this dessert you can customize how salty you would like the caramel with putting more or less sea salt on top. If you would like to make this a no bake dessert just use crushed up biscuits with butter and press that into the tart pan. Mix together until everything is well combined. Separate two eggs, placing both egg yolks into the mixing bowl. Mix together again. Sieve in the dry ingredients, the flour and cocoa and mix everything together. It should be crumbly in texture but when pressed should clump together. Pour into a tart pan press with a spoon until the base and sides are evenly coated. Prick all over with a fork and place into a 180C or 350F oven for 15 minutes. Cool on a wire rack. Place the sugar, glucose syrup, and water into a medium sized pot. Heat over medium hight heat for 10-20 minutes until the sugar has turned a light amber colour. Don't stir the sugar as this creates sugar crystals up the sides of the pot. Place in the butter, heavy cream, and vanilla extract. The caramel will bubble up but just wait for it to calm down and stir. Continue cooking for 10-15 minutes until the caramel has darkened in colour and become thicker. Cool for a few minutes until the bubbles dissipate and pour into the cooled tart base. Transfer to the fridge and leave to set for at least 2 hours. When the caramel is set heat the cream over medium heat until it starts to simmer, do not let it boil. Pour over the chopped chocolate and leave to melt for a few minutes. Stir together until the ganache is completely smooth and pour over the caramel. Leave to set for an hour and sprinkle over the flaky sea salt. Cut into slices and enjoy! Pour into a greased and baking parchment lined tin, dollop on the caramel sauce and cook at 180°C/Fan160°C/Gas 4 for 25 minutes. Allow to cool for 20 minutes, sprinkle on some salt, then slice and serve. YUM. This will take 7-10 mins. DO NOT WALK AWAY! It will burn very quickly if not careful and must be swirled in order to prevent burning. Once caramel appears, add ½ cup of warmed heavy cream, TURN OFF FLAME. Allow for boiling to settle, and then whisk to combine. Add ¼ tsp Fleur de Sel salt and 2 tbsp of butter. Whisk until smooth and transfer to a Pyrex pitcher to cool. Then in a large heat safe mixing bowl, add egg yolks and cornstarch, whisk until a smooth paste forms and set aside. In a large sauce pot add milk, cream and vanilla bean paste scraped from bean, and the bean itself. Simmer until foamy. Drain cream mixture through a sieve into a large heat safe container, to catch bits of vanilla pod. Then slowly pour a small amount of the hot cream mixture into the egg yolk mixture and whish to temper the eggs and prevent them from scrambling, continue to add the rest of the cream mixture whisking all the while until fully combined. Transfer this mixture into a cleaned out pot and heat on medium high, whisking all the while until thickened to a light pudding consistency but is still pourable. This will happen quickly as soon as it stats to thicken so don’t walk away! Remove from the heat (since it will continue to thicken if left on the hot burner) Add 2 tbsp (30 g) of butter and whisk until smooth. Add the caramel and whisk until smooth. Pour into heat safe ramekins, leave uncovered. And refrigerate for at least 2 hours or overnight. Top puddings with a sprinkle of fleur de sel, a dollop of homemade whipped cream and toffee bits.

This fudge recipe is creamy and rich! And if you use butterscotch chips, it's double the caramel! --- RECIPE: - Tin of condensed milk (395g) - 125g salted* butter, chopped - 1 cup brown sugar - 2 tablespoons golden syrup - 1/2 cup white choc chips - 1/2 cup butterscotch chop chips** *if you don't have salted butter, just add a pinch of salt **if you can't get butterscotch chips, you can use all white chocolate. METHOD: 1. Place the condensed milk, butter, sugar and golden syrup in a small saucepan over medium heat. 2. Heat and stir until everything is combined. 3. Reduce heat to low and let it simmer for 10 minutes. 4. Remove from the element and allow to cool just slightly. 5. Add the choc chips and stir until smooth and combined. 6. Pour into a container lined with cling wrap, you can spray this with a little cooking spray to make sure the fudge comes out. 7.Optionally, top with canned caramel and sprinkle on sea salt. 8. Leave in the fridge overnight to set. 9. Use a knife dipped in hot water to cut into squares. 10. Eat and enjoy!! :) --- Thank you for watching!
